We live in a time of division and suspicion, where it seems there is no longer any trust. If you take a right off Water Street in Stonington Borough, however, and follow the maritime stink of lobster bait and fish processing to the docks of one of Connecticut’s last commercial fishing fleets, you will be rewarded with not only a true vestige of neighborly kindness but some of the finest and freshest seafood anywhere around. Where? Inside the honor system hut run by the Bomster family and Stonington Seafood Harvesters. Imagine it: Friday high season. Summer rental or weekend place. The traffic out of the city and north on 95 is moving at a glacial pace. You get in way later than you expected but not to worry: the key part of dinner is waiting for you if you have a few dollars to drop in the honor box, or if you’d prefer, run your credit card through the machine waiting for you (no American Express). Yup, that’s it. Select your catch, make your own change, anytime, any day. Red shrimp. Salmon. Cod. Monkfish. And, best of all, the famous Bomster sea scallops, known up and down the eastern seaboard, cryogenically frozen on board the ship moments after being caught. No additives or phosphates, just pure scallop, which makes them perfect for a quick hit in the cast iron but also primed for crudo, ceviche, or nigiri. Just one of the plump prizes from the hand-sorted catch aboard the Bomster draggers bobbing about a chip shot from the garage doors of the hut itself. Best of all, when the farmers’ market is operating on the adjacent green in the warmer months, it’s a one-stop shop for produce, bread, cheese, and seafood.
